I guess that when I put yummy things in the blog, there is also an unwritten rule that I post said recipe...sorry my bad!!!
I not think that so many were following this blog, but minutes after postings I had multiple requests for the Blueberry Orange Muffins!
So, here you go! (I will figure out how to post recipes in there own section later on, too much for me to handle this morning though.)
Blueberry Orange Muffins
1 3/4 cups all-purpose flour
1/3 cup of sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
3/4 cup of skim mild
1 egg, slightly beaten
1/4 cup butter, melted and slightly cooled
3 tbs OJ Concentrate thawed
1 tsp vanilla
3/4 cup fresh or frozen blueberries (I put in more!)
Pre heat oven 400 degrees F. Grease muffin pan or line with paper cups.
Combine dry ingredients in large bowl. (I do so by sifting.)
Wet ingredients in a different bowl, beat until combined.
Mix both together until dry ingredients are barley moistened (batter will be lumpy.)
Add berries (ohhh, I am going to use strawberries next time!) and gently stir until they are distributed evenly.
Fill cups 3/4 full. Bake 20 to 25 minutes or until inserted toothpick comes out clean. Let cool for 5 minutes (not likely) in pan.
Makes 12 muffins.
Note: If baker would like to have any of the muffins for themselves, double the recipe!!!
